My first attempt at homemade chips, oven preheated to 400 degrees for 25 minutes, cut up squash, sweet potato, ad eggplant dipped in olive oil with sea salt on a baking sheet. They didn't come out crisp enough and were more like grilled veggies, but still very tasty. Next time will try baking longer and thinner slices.

Butternut Squash Salad
So I bought this HUGE butternut squash, and realized I had no idea how to prepare it, I just knew I loved the taste. As with all my veggies, I put them in a small microwave plastic pot, zap it for a minute or two, and its as easy as that. For this dish I also grilled the squash on a tray in the oven. This salad also has turkey, Wheat Thins Flatbread crackers over romaine. Tasty :).
Turkey Avocado Salad
This salad requires no cooking and contains my favorite salad ingredient, avocado.
So simple - avocado, turkey, and Wheat Thins Flatbread crackers over romaine.

Tuna Provolone Salad
After making the tuna with kraft's olive oil mayo, I added it to a salad of romaine lettuce along with strips of provolone cheese, black olives, and crumbled crackers.

Amazing veggie burger discovery that I have to share - Dr. Praeger's Veggie Burger. Super healthy and most importantly delicious - it's not dry and tiny like other veggie burgers (I've been eating the Morning Star brand). Very green and moist, either on the grill or with a quick microwave. Even featured on the Dr. Oz show best frozen foods. I can' wait to try their other products, let me know if you have any reviews!

Brussel Sprout Salad
You'll be seeing a lot of salads from me on here. I love salads but they can get dull if you don't come up with new creations. I enjoy them because they are very healthy, take awhile to eat so you can enjoy it, and there are many ways to be creative with ingredients.
This salad is romaine lettuce topped with low fat turkey, one hard boiled egg, half a tomato, a third avocado, and lined with brussel spouts which I boiled and salted. I use crumbled crackers like Kashi's 7 grain crackers as a healthy alternative to packaged croutons. The dressing used is Marie's balsamic vinaigrette.
Tomato Avocado Sandwich
A simple sandwich for my first blog post ever. Tomato and avocado with a toasted on wheat bread. I used Kraft's olive oil mayo, a healthy and tasty mayo alternative. This lunch takes five minutes and contains two of the best fruits for your skin and body. Here's a link to the great mayo product I discovered.
