So my first experience cooking chicken breast went well. Just used a pan and some olive oil on the stove. Cooked sweet potatoes and red peppers over romaine topped with flatbread crackers.

Pesto Pasta and Veggies
Use whole wheat pasta and add pesto, this is fresh pesto from a local farmer's market. For a side I zapped butternut squash and asparagus in my microwavable bowl. Careful, wheat pasta is more filling than regular so you may not need a lot!
Ham and Apple Sandwich
They used to serve this at my dining hall and I loved the idea and taste so here's a healthy version.
Just used olivio butter spread on whole wheat toast, layered low fat ham and two
small (or one large) apple and grilled. Lovely taste combination and texture.
